St. Patrick’s Day Worthy Dishes 2014

I’ve told you before that I’m not Irish, but I love St. Patrick’s Day!  The food, the colors, the festivities…all of it.  Do you celebrate St. Patrick’s Day?  If so, I’ve rounded up some of my favorite recipes that you may be able to use for your St. Patrick’s Day feast.  Not all of it is traditional Irish fare by any means, but they incorporate beer, the color green, or the chocolate-mint flavor combination that I love so much this time of year. :)

Apricot Orange Irish Soda Bread is a great accompaniment to your St. Patrick’s Day meal, or eat it for breakfast.  It’s perfect with a little pat of butter and orange marmalade!

broccoli slaw salad

No, it’s not cabbage, but in case you aren’t a fan of cabbage, this Broccoli Slaw Salad is just the thing for you.  It’s chalk full of broccoli slaw, broccoli florets, bacon, dried cranberries, and slivered almonds for one delicious side dish.

Shaved Brussels Sprout Salad gives you your cabbage in a different way.  After all, brussels sprouts are in the cabbage family!  This salad has egg, bacon, and almonds with a lemony vinaigrette.

What’s a St. Patrick’s Day feast without Corned Beef and Cabbage?  This is a slow cooker version that you can set up ahead of time and forget about until the big meal. :)

Curried Cabbage Coleslaw is the perfect side dish for corned beef, and I actually prefer this to overly soft cabbage.  This slaw is shredded cabbage with scallions, golden raisins, and celery, in a curried coleslaw dressing.

Guinness Beef Chili is one of my favorite chili’s — it’s so hearty, and the Guinness gives it so much depth and flavor.  :)

There’s nothing Irish about key lime, but since lime is green, it’s perfect for this holiday.  Any excuse for key lime and I’m there!  These Key Lime Cooler Cookies are buttery cookies with the refreshing flavor of key lime.  The powdered sugar doesn’t hurt either.

Key Lime Pie with Meringue Whipped Cream has been my signature pie for years.  You just can’t go wrong with this creamy, tangy pie atop a crumbly graham cracker crust.

Key Lime Pie Bars are tangy and citrusy key lime filling over a shortbread crust.  Trust me…these will not disappoint!

lime curd

Whip up a batch of Lime Curd for scones, filling pies, or topping your Greek yogurt.  The options are endless, and this stuff will make anything feel like a treat.

Mini Irish Soda Bread with Blood Orange Marmalade are the mini version of my Apricot Orange Irish soda bread, but with currants instead.  They’re a cross between scones and English muffins, and they’re such a great breakfast treat slathered with that marmalade.

Thin Mint Ice Cream Brownie Cupcakes incorporate Girl Scout Thin Mint Cookie ice cream atop a brownie with chocolate ganache, whipped cream, and sprinkles.  These just scream St. Patty’s Day!

Thin Mint Milkshakes are my favorite Girl Scout cookie blended with vanilla ice cream for an easy ice cream treat that everyone will love!

yukon gold mashed

Last but not least, these Yukon Gold Garlic Mashed Potatoes are the perfect side dish for your corned beef.  These are much better than soggy, slow cooker potatoes, and the yukon golds make this one creamy mash.
